Red lentil curry
- 2 onions
- 2 teaspoons of crushed garlic
- 2 teaspoons of crushed ginger
- 1 teaspoon of turmeric
- 1 teaspoon of coriander
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1 teaspoon of garam masala
- 1⅔ cups of dried red lentils
- 3 cups of vege stock
- 1 cup of coconut milk
- 1 can of tomatoes
Dice onions, then saute with crushed garlic and crushed ginger until soft.
Add the turmeric, coriander, cumin, paprika, garam masala, and saute for a few seconds.
Stir in dried red lentils and vege stock. Bring to a simmer and cook until the lentils have absorbed most of the liquid.
Stir in coconut milk and tomatoes. Simmer until desired consistency is reached.
Season with salt and pepper.
