B’s chocolate cake

  • 180 grams of flour
  • 200 grams of sugar
  • 1½ teaspoons of baking powder
  • 1 teaspoon of baking soda
  • ¼ cup of cocoa powder
  • 1 tablespoon of instant coffee
  • 2 egg yolks (large)
  • 1 cup of milk
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of golden syrup
  • ¾ cup of oil
  • 1 teaspoon of vanilla essence
  • ¼ teaspoon of almond essence
  • 2 egg whites (large)

Sift and whisk together flour, sugar, baking powder, baking soda, cocoa powder, instant coffee.

Beat egg yolks with milk, apple cider vinegar, golden syrup, oil, vanilla essence, and almond essence until frothy. Mix into dry ingredients with whisk.

Beat egg whites to stiff peaks, fold into batter until just combined. Bake at 180°C for 40 minutes.
