Brown rice salad

If using bottled lemon juice, only use half as much as listed here. It tends to have a very potent taste.

  • 1½ cup of brown rice (cooked)
  • 2 capsicums
  • 2 spring onions
  • 1 cup of peanuts
  • ½ cup of sesame seeds
  • ½ cup of pumpkin seeds
  • ½ cup of sunflower seeds
  • 2 tablespoons of lemon juice
  • ½ cup of oil
  • ¼ cup of soy sauce
  • ½ cup of sultanas

Cook the brown rice, finely slice the capsicums and spring onions, and individually toast the peanuts, sesame seeds, pumpkin seeds, and sunflower seeds.

To make the dressing, combine the lemon juice, oil, and soy sauce.

Combine rice, capsicums, spring onions, sultanas, peanuts, seeds, and dressing.
