Banana pancakes

  • ¾ cup of rolled oats
  • 1 tablespoon of brown sugar
  • 1 teaspoon of baking powder
  • ½ teaspoon of cinnamon
  • a pinch of salt
  • 2 tablespoons of flour
  • 1 egg
  • 1 mashed banana
  • 20 ml of oil
  • ½ teaspoon of vanilla essence
  • ¼ cup of milk

Blend rolled oats to the consistency of coarse flour. Combine with brown sugar, baking powder, cinnamon, salt, and flour.

Whisk egg, mashed banana, oil, vanilla essence, and milk. Mix into dry ingredients to make a smooth batter.

The easiest and fastest way to cook these is in an oven. Lay baking paper onto a tray, spoon large dollops of mixture onto the tray, and bake at 180°C for 10 minutes.
