Toor Dal

  • 1 cup of yellow lentils
  • 2 tablespoons of oil
  • ½ teaspoon of cumin seeds
  • 1 teaspoon of ginger
  • 1 teaspoon of garlic
  • 1 teaspoon of crushed chilli
  • 1 onion
  • ½ teaspoon of chilli flakes
  • ¼ teaspoon of turmeric
  • ½ teaspoon of garam masala
  • 2 tomatoes (diced)
  • 1 teaspoon of salt
  • ½ tablespoon of coriander

Rinse and soak yellow lentils for 20 minutes. Drain and cover with 4 cups of fresh water and simmer for 20-30 minutes. Drain any excess water and lightly mash.

Heat oil in a pan. Add cumin seeds, ginger, garlic, and crushed chilli and saute on a low heat until fragrant. Dice onion, add to the pan and saute until golden.

Add chilli flakes, turmeric, garam masala, tomatoes, and salt. Cook until tomatoes are soft.

Add the cooked lentils and coriander.
