Tomato Relish

  • 500g tomatoes
  • 250g red onion
  • 1 teaspoon of crushed garlic
  • 1 teaspoon of crushed chilli
  • ¼ cup of apple cider vinegar
  • 75g brown sugar
  • ¼ teaspoon of salt

Chop tomatoes and red onion. Add to a pot along with crushed garlic, crushed chilli, apple cider vinegar, brown sugar, and salt. Simmer over a low heat until thick - this usually takes around one hour.
