Fruit mince

Any combination and ratio of dried fruit can be used, so long as the total weight is in the neighbourhood of 850 grams.

Fruit mince tarts
  • 200g raisins
  • 200g currants
  • 200g sultanas
  • 100g dried apricots
  • 150g glace cherries
  • 1 apple
  • 2 oranges
  • 150g brown sugar
  • 1 tablespoon of cinnamon
  • 1 teaspoon of ginger
  • ½ teaspoon of nutmeg
  • 100g butter
  • 1 cup of apple juice

Roughly chop raisins, currants, sultanas, dried apricots, and glace cherries. Grate the apple, zest and juice the oranges.

Add all of this to a pot along with brown sugar, cinnamon, ginger, nutmeg, butter, and apple juice. Simmer until mixture is combined and reduced.
