Pastry

Wholemeal flour can be used, but you’ll need a lot more water to get the pastry to cohere.

  • 1 cup of flour
  • 2 tablespoons of margarine
  • a pinch of salt
  • 2 tablespoons of ice-cold water

Rub together flour, margarine, and salt to the consistency of breadcrumbs. Add ice-cold water and combine.

Squeeze together the now-wet crumbly mixture to form a moist ball, then roll it out into a sheet.
