Focaccia
- 2 cups of warm water (40°C)
- 1½ tablespoons of dried yeast
- 1½ teaspoons of salt
- 1 teaspoon of sugar
- 1 tablespoon of high grade flour (for yeast)
- some herbs and spices
- 3 cups of high grade flour (more or less)
- a sprinkle of flaky salt
- a sprinkle of rosemary
- a sprinkle of garlic
Mix warm water, dried yeast, salt, sugar, and high grade flour. Cover and leave in a warm place for 10 minutes. Add herbs and spices. Gradually mix in high grade flour until stretchy and smooth, and put back in warm place for 45 minutes.
Line tray with baking paper and spread dough out with oiled hands. Dimple the top of the bread with fingers and sprinkle with flaky salt, rosemary, and garlic. Bake at 220°C for 15 minutes.
