Corn fritters

  • ¾ cup of chickpea flour
  • 2 tablespoons of cornflour
  • some salt and pepper
  • 2 teaspoons of parsley
  • ¾ cup of water
  • 1 onion
  • 1 carrot
  • 1 can of corn
  • 1 teaspoon of crushed garlic
  • 1 flax egg

Mix together the chickpea flour, cornflour, salt and pepper, and parsley. Add water and mix until smooth.

Finely chop the onion and grate the carrot. In a separate bowl combine the onion, carrot, corn, crushed garlic, and flax egg. Add to the flour mix and combine thoroughly.

Cook 1/2 cup portions of the mixture at a time in a frying pan, flipping halfway through cooking. These can also be baked in an oven at 180°C for 20 minutes.
