Coconut loaf
- 3 cups of flour
- 3 teaspoons of baking powder
- ¼ teaspoon of salt
- 1 cup of desiccated coconut
- 1 cup of sugar
- 1 egg (lightly beaten)
- 1½ cups of milk
- 1 Tbsp of oil
Sift together flour, baking powder, and salt.
Stir in desiccated coconut and sugar.
Add egg, milk, and oil, stir to combine.
Bake in a greased loaf tin at 180°C for 45 minutes.
