Carrot muffins

  • 2¾ cups of wholemeal flour
  • 1¼ cups of brown sugar
  • 3 teaspoons of baking powder
  • ½ teaspoon of baking soda
  • 3 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • ½ teaspoon of ground ginger
  • ¼ teaspoon of salt
  • 250 grams of carrots (grated)
  • 1 cup of milk
  • ½ cup of oil
  • ⅓ cup of walnuts (chopped)
  • ⅓ cup of sultanas
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of vanilla essence

Combine wholemeal flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ground ginger, and salt, then mix in carrots, milk, oil, walnuts, sultanas, apple cider vinegar, and vanilla essence.

Bake at 180°C for 20 minutes.
