Banana muffins

To make apple muffins, replace the banana with 1/2 cup of apple sauce and 1 diced apple.

  • 1½ cups of bananas (around 3)
  • 1 tablespoon of baking powder
  • 1 teaspoon of baking soda
  • 1 egg
  • ½ teaspoon of vanilla
  • 3 tablespoons of oil
  • ¼ cup of sugar
  • ¼ cup of brown sugar
  • 2½ tablespoons of maple syrup
  • ¾ teaspoon of salt
  • ½ teaspoon of cinnamon
  • ¾ cup of milk
  • 1 cup of almond meal
  • 1¼ cups of flour
  • 1 cup of oats
  • ½ cup of walnuts (plues extra for on top)

Mash bananas and mix together with baking powder, baking soda, and egg.

Add vanilla, oil, sugar, brown sugar, maple syrup, salt, cinnamon, and milk and whisk vigorously to combine.

Fold in almond meal, flour, oats, and walnuts.

Spoon into muffin tins and top with walnuts.

Bake at 190°C for 20 minutes.
