Banana loaf
- 1¾ cups of wholemeal flour
- ¼ cup of brown sugar
- ¼ cup of white sugar
- 3 teaspoons of baking powder
- ¼ teaspoon of salt
- 1½ teaspoons of cinnamon
- 1½ teaspoons of ginger
- ¼ teaspoon of nutmeg
- ½ cup of sultanas
- ⅓ cup of pumpkin seeds
- ½ cup of walnut pieces
- 2 bananas
- 1 egg
- ¼ cup of milk
- ¼ cup of oil
Combine wholemeal flour, brown sugar, white sugar, baking powder, salt, cinnamon, ginger, nutmeg, and the sultanas, pumpkin seeds, and walnut pieces. In a separate bowl, mash the bananas, add the egg, milk and oil, and mix into the dry ingredients to make a thick batter.
Bake at 180°C for 40 minutes. It will quickly form a brown crust, but the inside will take a while to cook through.
